Frittata di Carciofi with mushrooms

Frittata di Carciofi, known otherwise as Tortino di carciofi is a traditional Tuscan omelette, served usually as a side dish. The dish is made of eggs, artichokes, flour, salt and pepper. Sometimes, the recipe is enriched with ingredients like cheese, onions and potatoes. Because the omelette looks more like a pie, it can be cooked in the oven, but the original version suggests using a frying pan and olive oil.

The beaten eggs, mixed with the rest of the ingredients, are introduced in the pan, over the allready simmered artichokes. The dish has to be turned upside down when the buttom obtains a golden colour.

The ready frittata di carciofi is served either hot or cold, garnished with chopped parsley leaves and lemon wedges.
