Froscia o malassata

This is another traditionally Sicilian dessert, part of the list of delicacies showing the Italians' love for "ricotta". This simple but sweet delight is also composed of cheese, with the addition of eggs, sugar and the delicate but refreshing mint and cinnamon. All these compose a mushy mixture resulted from accurately kneading the ingredients together. That is a traditional method of preparation used since ancient times. The word "froscia" is translated as "loose", indicating the soft and tender consistency which the cook should aim for. If overdoing it, one could always add some breadcrumbs. The resulting mixture is baked.
