The dish is served hot immediately after preparation, and is often accompanied by french fries. This dish is particular to Madrid and cannot be found anywhere else in Spain. This product was usually sold in kiosks or shops. Few establishments today serve gallinejas, as it is considered to be more of a delicacy than a common dish. It is most commonly found served during festivals.
