Griouche are also called griwech or chebbakia and are beautiful honey sesame pastries. It is a mouth watering combination of fried dough, honey and sesame seeds. The pastry is made in the shape of roses. The batter for the cookies is made from flour, butter, sugar and eggs. Then orange blossom water is added. The pastries are cut with a special ravioli cutter. The cookies are fried in a pot in hot oil and immediately are dipped in warm honey. Sesame seeds are scattered over the cookies covered with honey. Griouche are cooled and are ready to be served.
