Gruyère salad is a popular side dish in Zurich, made basically from greens and Gruyere cheese. The recipes of this dish are much varied, as the Swiss like to combine utility with originality, everything depending on a customer’s wish and taste. Traditionally, the ingredients to make this salad are: Gruyère cheese, dry white wine, arugula leaves, shallot onions, parsley, Dijon mustard, red wine vinegar, corn oil salt and pepper. Other components might be: greens, pears, beet leaves, apples, avocado,etc. The preparation depends on the restaurant and the chef, but usually the Gruyere is marinated in white wine in order to intensify its taste and flavor, onions and parsley are chopped, the cheese is cut either into stripes or thin slices. A dressing made from vinegar, mustard, corn oil, salt and pepper is poured on the top, tossing thoroughly all the components and serving the salad on a plate or bowl. It is a good start of a meal and a light dinner for those who are on a diet.
