Hairst Bree is the Gaelic name for the classical Scottish soup. The locals also call it Harvest Broth or Hotch Potch Soup. According to the traditional method of cooking this highland soup, all fresh vegetables and meat are boiled into a single light broth. This soup symbolizes the end of summer and harvesting. The soup contains lamb, bones, different vegetables, beans, shredded lettuce, cauliflower and chopped leaves of varied herbs. This traditional Scottish soup is served in warmed bowls with parsley.
