Hasselnødlagkage or hazelnut torte is a Danish cake generally baked of hazelnuts, almonds, eggs, flour, sugar, cherry brandy, raspberry jam and whipped cream. Of course there are many variations of this cake. Sometimes it is cooked using rice flour to make it gluten-free or chocolate is added to the batter. This cake is one that is usually made on special occasions. It has a sweet fruity flavour. Hasselnødlagkage is normally round-shaped topped with whipped cream and sprinkled with icing sugar.
