Herb Grilled Aubergine is one of the most popular salads in Argentine, that is usually served warm.

The sliced grilled aubergines are dressed with minced garlic, olive oil and a mix of herbs, afterward which they are being immediately served. The dressing is usually prepared while the aubergines are grilled along with asado meat. This spicy dish contains three mandatory herbs: oregano, basil and thyme. Other recipe varieties include sweet or hot paprika and red pepper flakes.

Herb Grilled Aubergines are usually served with asado and a glass of delightful chilly Torrontés wine.
