Herring is one of the iconic dishes that belongs to the standard repertoire of the Dutch cuisine. First Dutch herring, otherwise called "Hollandse nieuwe", usually makes his first appearance at the beginning of June. So this is the season when herring dishes are particularly widespread throughout the Netherlands. Herring and herb relish makes a great Dutch choice. It is prepared in about five minutes. The dish is made with Dutch brined herring, but also other ingredients such as sliced spring onion, chopped fresh flat-leaf parsley, chervil, grated lemon zest, virgin olive oil, lemon juice, red wine vinegar, sea salt and black pepper. The herring is chopped finely and blended with the rest of the ingredients. It is left to stand for about one hour, so that the flavors can develop.
