Hochzeitssuppe or Wedding soup is the German dish that is usually served as the starter on the menu at the wedding reception. It is based on chicken broth and chicken meat, asparagus, cooked eggs and noodles. Sometimes the soup is prepared with raisins. There are also many variations. One of them is the Westfälische Hochzeitssuppe that is prepared from beef. This also forms the entree on wedding menus, followed by cold Tafelspitz (boiled beef) with remoulade, silverskin onions and pickled gherkins as a second course. Hochzeitssuppe takes much time to be prepared, that's why it is served only on special events.
