Horchata de Chufas

Horchata de Chufas is a refreshing drink, well consumed throughout Barcelona, especially during summer time. This creamy white beverage is made from Chufa (Tiger nut) and is usually served ice cold. The ingredients required for the preparation of this drink include chufas, water, sugar and cinnamon.

Originally from Valencia, the idea of making horchata from tigernuts comes from the period of Muslim presence in Valencia (from the 8th to 13th century). It has a regulating council to ensure the quality of the product and the villages where it can come from, with the Denomination of Origin. The village of Alboraia is well known for the quality of its horchata.

Horchata made from Chufa nut is very different from the Mexican Horchata made from rice. In Spain, the drink is usually served along with a donut-like pastry. Tigernut horchata is also used in place of milk by the lactose intolerant.
