Salmon is a popular food. Classified as an "oily fish", salmon is considered to be healthy due to the fish's high protein, high omega-3 fatty acids, and high vitamin D content. There are several dishes that can be made with salmon, such as salads, casseroles, sandwiches or it can be served as a side dish, if grilled or smoked. There are several types of sandwiches that can be made with salmon. The hot smoked salmon sandwich is one of them. The preparation of this sandwich calls for the fish to be smoked. Typically, the salmon fillet is first cured, then smoked. Hot smoking is a special method of cooking the salmon, thus making it less moist, and firmer, with a less delicate taste. This method is commonly used for both, trout and salmon. It is essential to brine the salmon sufficiently and dry the skin enough to form a pellicle prior to smoking. Without a sufficient pellicle, fat will ooze out of the fish as it cooks, resulting in an unsightly presentation. The smoked fish fits great when served on a sandwich along with other ingredients, such as vegetables, cheese or eggs. It is a delicious finger food, that can be served both, as an appetizer or as a snack.
