Humintas a la Olla
Humintas a la Olla is a delicious treat made of fresh ground cornmeal, cheese, anise, ground pepper and sometimes cinnamon. The corn kernels are boiled, mashed and mixed with the condiments. The paste is nicely wrapped in corn husks, decorated with a slice or two of cheese and baked or boiled. The dish may be cooked with a sweet sauce or with a spicy one, depending on the preferences of the person who is going to savour it. The humintas are perfect snacks to serve with the afternoon tea or coffee.
