The Insalata di mare is a cold dish including various seafood and other products that have the ability to accentuate the aroma and taste of the first ones. The recipe varies from place to place but the most popular components of the salad are the cleaned and rinsed calmari, debearded mussels, deveined shrimps or prawns, squid, octopus, scallops, clams and cockles. The best products to accompany this delicious cocktail of seafruits are Taggiasca or/and Kalamata olives, bell peppers, carrots, caper berries, garlic cloves, extra-virgin olive oil, lemon juice, red wine vinegar and capers. All the ingredients are mixed together and chilled for aproximately two hours. The salad is garnished with chopped parsley leaves and the remaining mussels with shells.
