Instant-boiled mutton (涮羊肉)

Instant-boiled mutton is thin sliced mutton cooked in a hot-pot filled with boiling water placed in the middle of the table. Paper-thin lamb slices, tofu, vegetables, bean vermicelli, etc. The sliced mutton is put into boiling water for a very short time, literally seconds, and as soon as the meat changes color it is taken out of the hot-pot. The cooked mutton is eaten with a mixture sauce such as sesame sauce, leek flower, ginger, chili oil, etc.
