Involtini alla salvia with sauce

Involtini alla salvia is a very popular dish served in the restaurants of Florence. It represents meat roulades with sage leaves. The leaves are rolled inside meat stripes (bacon or well pounded chicken, turkey or pork breasts; or combination of them), the roulades are fixed with toothpicks or kitchen string (in order to avoid the disfigurement of the delicacies) and fried until golden and crispy in olive oil. Sometimes the filling of the rolls is enriched with slices of mortadella and Edam cheese. In some cases, while cooking, the involtini alla salvia are sprinkled with dry white wine. The dish is served immediately.
