Irish Potato Salad is an easy to make and very tasty dish often served on St. Patrick’s Day. The main ingredient of the salad is of course potatoes, peeled and boiled or boiled unpeeled. Other ingredients are sour cream or milk, mayonnaise, green onion, salt and pepper. The Irish Potato Salad also has a few variations. The dressing can be made with olive oil or red wine vinegar. As main ingredients, bacon, corned beef and hard-boiled eggs can be added too. Other vegetables and herbs like garlic, kale, Napa cabbage, leek, cabbage, radishes, celery, shallots, dill and/or fresh mint can also be used. The salad is usually served hot, but can also be served cold, as well as a side dish.
