Irish Potato Soup

Irish Potato Soup is a traditional Irish dish, it is easy to prepare and very tasty. Usually it is served on a wet cold day. Irish Potato Soup can be served as a main dish too. The ingredients of the soup are Irish butter or margarine, onions, leeks, potatoes, garlic, chicken broth, milk, dried parsley, celery and grated cheese. The vegetables are first simmered in butter, then there are added the chicken broth, salt and pepper. When the soup is almost ready - milk, Cheddar cheese and herbs are added. The soup can be served with some fresh chives or green onions, and sometimes with some crumbled cooked bacon on top. Irish Potato Soup can also be blended before serving.
