What can be better than Eggs Benedict for breakfast? Eggs Benedict is a dish that consists of two halves of an English muffin, topped with ham or bacon, poached eggs and Hollandaise sauce. This dish can be found on the menus of various American restaurants. There are several variations of the dish.

Eggs Benedict are also very popular in Chicago, where the most well-known variation is the Irish eggs Benedict. Irish eggs Benedict replaces the ham with corned beef or Irish bacon. Although unknown in Ireland itself, corned beef and cabbage is the iconic Irish-American dish, with over half of the 47 million pounds of corned beef sold annually in the United States sold in the two weeks prior to Saint Patrick's Day. The dish is rather easy to make, it being very tasty and consistent. They are great when served with a side of sweet potatoes.
