Italian combo is a type of sandwich which is very popular within the Italian community of Chicago. The Italian combo sandwich is a variation of the submarine sandwich, also known as a sub among other names. The submarine sandwich consists of a long roll of Italian or French bread, split lengthwise either into two pieces or opened in a "V" on one side, and filled with various varieties of meat, cheese, vegetables, seasonings, and sauces. In Chicago, the Italian combo is made of classic Chicago spices, shaved beef, fennel-seed-studded sausage and roasted peppers, all these being ultimately folded in Turano bread. Variations of the recipe may call for the use of other vegetables such as mushrooms or green bell peppers. In Connecticut the dish is known as Italian Cold-Cut Grinder. The sandwich is usually served with adds-on such as pickles or various dressings.
