Kırmızı Mercimek Çorbası is a red lentil soup widely consumed throughout Turkey. The traditional recipe includes onion, carrot, tomato or pepper paste, red peppercorns. It may also contain dried mint, potato, and different spices. First, chopped onion is sauteed in a pot with oil together with tomato paste and chopped carrots. Then washed and drained lentils, salt and water are added and cooked until soft. When the soup is ready, it is blended and ladled into serving plates. The melted butter mixed with red pepper is added in the final stage of the preparation. The soup is usually served hot with lemon juice.
