Kapr smažený s bramborovým salátem
A traditional Christmas meal in the Czech Republic is kapr smažený s bramborovým salátem (fried carp and potato salad), eaten during Christmas dinner in the evening of 24th December. Still, it is possible to enjoy this meal at any time of the year.
First the dish is prepared by deboning, removing skin and cleaning the carp fillets. The fish is briefly dipped into a salt/flour mixture, then egg/milk mixture, and finally into bread crumbs. It is usually fried in medium hot oil until both sides are golden brown. The recipe for potato salad differs slightly among every Czech family. The main ingredients are: potato cooked with jacket, canned peas, onions, cooked carrots, parsley and celery, pickled gherkins, cooked eggs and mayonnaise. Some families may add grated apples or salami. The best potato salad is prepared a day before Christmas Eve so that all the ingredients can "mellow" for a day. A portion of potato salad and fried carp is usually garnished with lettuce leaves, tomato and lemon pieces.
