Konijn in geuze also known as lapin à la gueuze is rabbit in geuze, which is a spontaneously fermented, sour beer from the area around Brussels. The rabbit is cleaned browned in some butter. Latter it is cooked or simmered with some red onions, fresh thyme, bay leaves, brown sugar, Geuze (beer) and sometimes some wine vinegar and bouquet garni or some creme fraiche. The Konijn in geuze can be garnished with mushrooms, carrots or plumbs. It can be served with some side dishes made of potatoes or other vegetables.
