Le Pottekeis is a very popular snack in Belgium and it is going especially well with some Cantillon Gueuze or other Belgian beer. It is in fact an open sandwich made with fresh baguette, or some brown bread (the bread can also be toasted) and a mixture of Fromage Blanc (quark) and Fromage de Bruxelles on top. To the mixture are always added salt, sometimes sea salt, pepper (usually cayenne pepper), some sliced shallot, onions or chives and some sliced radishes. Le Pottekeis are rather salty and have a special taste. The snack is very popular with beer and sometimes is served in bars on plates.
