The Lettuce, Tomato & Onion, known also as Ensalada ilustrada, Ensalada Mixta or Ensaladita represents one of the most popular salads in Spain, especially in Aragon and its surroundings. The original receipt of this dish includes onions, lettuce, tomatoes and tuna fish (either canned in oil or pickled), marinated olives, boiled eggs, white asparagus and carrots. The salad is usually dressed with vinaigrette (mixture of vinegar and olive oil, flavored with herbs, spices, and other ingredients). Other variations of the ensaladita may include anchovies, mushrooms, eggplants, beets, bell peppers, Ensalada Mixta – Mixed Salad salami, sausages and many other ingredients.
