Liáng bàn huáng guā (涼拌黃瓜), literally translated as pickled cucumber salad, is a Taiwanese common side dish, popular in Taipei as a zesty appetizer. This seems to be quite a simple salad, although, it needs to be prepared with a day in advance. The ingredients for this dish are: cucumbers, carrots, white rice vinegar, garlic, chili pepper, salt and sugar. The cucumbers are scrubbed well from skin and cut into quarters, the carrots are sliced into slivers and both, consequently, are sprinkled with salt and kept in a cool place for a couple of hours, after which they are thoroughly drained and mixed with a sauce made from rice vinegar, garlic, chili pepper and sugar. Afterwards the salad is refrigerated for some hours before being served with meat dishes or alone. A variation of this salad is to substitute the cucumbers with other vegetables like cabbage, kohlrabi, Chinese cabbage etc.
