Mücver are vegetable fritters or pancakes prepared from zucchini as the main ingredient. The classical recipe is very simple and is favored by Turks from every region of the country. It includes components like grated zucchini, eggs and flour which are mixed and fried in oil. The modern variations of the dish may have feta cheese or white Turkish cheese, parsley, fresh thyme, dill, fresh mint, roasted or raw onions, and garlic. The seasoning is added to taste. When all the ingredients are mixed together, flour is added till thick batter mixture. Then small portions of mixture are put in frying pan with hot oil, patted till become flat and thick patties, and fried on both sides until golden brown. It is preferably to use sunflower oil or mild olive oil for frying zucchini pancakes.
The ready made Mücver is served hot with Cacik or a yogurt garlic sauce, or as an accompaniment to a main meal. Cold zucchini pancakes go well for a picnic.
