Mala Mogodu or Mogodu is a classic South African dish. Mogodu is a derivative of tripe served as a stew with hot pap which has as basic ingredients tripe, salt, water and mealie meal. Traditionally, the dish is made with raw and unprepared tripe, known in South Africa as black tripe. The tripe and the intestines are then boiled, this dish being served as a hot stew during the dinner.
Many Cape Town locals serve Mala Mogodu with spinach. Variations of Mala Mogodu consist of tripe stewed with carrots and potatoes or other vegetables.
