Mee Soto is a popular dish in Malay and Singaporean cuisine. The classical soup is prepared of chicken stock and special Rempah depending on locality and gastronomic traditions. Then blanched yellow noodles and tender chicken pieces are added to this delicious and fragrant stock. The soup is garnished with fresh chopped spring onions and cilantro, sliced shallots and served with chili. Different variations of the dish may include hard boiled egg, sliced potatoes, blanched bean sprouts, fried shallots, coriander and cumin, but chicken broth may be substituted by beef broth.
