Mussels (Turkish: Midye) is an inherent part of Istanbul cuisine. Midye Tava are mussels covered with flour and fried on shishs. It goes well before the main meal or as a snack to stay one's hunger.
To prepare this appetizer first mussels are removed from the shell, thoroughly washed, cleaned on edges and dried. The soaked yeast, flour, eggs and margarine are mixed well in a large bowl. Then mussels are coated with flour and batter, and fried in a skillet with oil until golden brown. The fried mussels are dried of excess oil on a paper towel, sprinkled with salt, chopped parsley and lemon juice, and served immediately with tarator sauce.
