Minestra di farro, known otherwise as Zuppa di Farro, represents a traditional Tuscan soup, specific namely to Lucca due to the fact that spelt, which is the key ingredient in this dish, grows widely in Garfagnana (part of the Lucca province). Beside spelt, the recipe includes beans, onions, garlic cloves, celery stalks, sage leaves, marjoram, rosemary, diced ham, tomatoes, cinnamon, nutmeg, salt and ground pepper. The garlic, onions and celery are sauteed and simmered together with the other ingredients for about one hour. The soup is served with bread and a drizzle of olive oil.
