Mondeghili (Mondeghini, Polpette) is a traditional Lombardian dish made basically from minced meat, although, there are varieties of mondeghili, in other parts of Italy, made from vegetables, fish, cereals. The ingredients for classical Milanese meatballs are: minced beef, garlic, butter, grated Parmesan cheese, milk, liver “Mortedalla” bologna, breadcrumbs, stale bread rolls, salt, pepper, parsley, sausage, and eggs. They usually have a ball form, but different chefs make them in an individual manner.
The meat is well mixed with sausage, mortadella, eggs, chopped parsley, garlic and bread rolls (previously soaked in milk and squeezed well), parmesan cheese, salt and pepper. From this mixture the meatballs are formed, then covered in breadcrumbs and fried in butter. This is a deliciously good meal both hot and cold.
