Mozart Cake is a traditional pastry in Austria, representing a cake with chocolate mousse between the three layers of pastry (traditionally white but can be chocolate) and finely chopped pistachios - both in the cream and for decoration. The cake is not hard to make, but the process is a bit laborious. Preparing the sweet topping bases, making the mousse, chilling, putting together all the components and freezing, but worth the effort. The dough is made in a traditional way with almond flavor, but some recipes may also include cinnamon. The decoration is made with icing sugar, marzipan or almond paste. Sometimes the cake may have white/dark chocolate glaze or can be decorated with chopped nuts onto the sides of the cake.
