Muhallebi is a famous Turkish pudding dessert based on rice flour, starch, and milk. It is a combination of products, which makes Muhallebi light and melting. Muhallebi is also used as a component for other Turkish desserts.
Other ingredients also used for Muhallebi preparation are sugar, salt, cinnamon and sometimes lemon, orange or rose water. To prepare this Turkish dessert, milk is mixed with sugar in a saucepan and heated slowly, not to burn the milk. Then rice flour and starch dissolved with water are added to sweetened simmered milk, stirring constantly. When the mixture is thick enough to coat the spoon, the saucepan is removed from the heat, and rose, lemon or orange water is stirred in. The dessert is served chilled, cut into pieces and garnished with cinnamon or chopped pistachios.
