Ochsenmaulsalat is a salad made from the meat of a beef tongue and which is particularly popular in Southern Germany and Austria.

To prepare the above mentioned salad, the tongue is very thinly sliced, cut into bite-sized pieces and cooked; then it is mixed with a dressing made from white vinegar, vegetable oil, chopped onions, salt, pepper, chopped pickles or capers, added to taste, and herbs.

Ochsenmaulsalat is served with traditional roast potatoes or simply with bread; it is offered as an appetizer dish and according to German Food Code, it should contain at least 50% of meat.
