Ollada (also named as putxero or perolada in the Valencian Community) is a traditional dish around the world that is made by boiling vegetables and meat in a casserole.

The ingredients can vary and may include such vegetables as potatoes, carrots and artichoke, as well as legumes such as beans and kidney beans.

As a rule, Ollada is prepared as a stew. It has a delicious taste and a unique texture.
