Palombo alla livornese

The Palombo (dogfish) is a very popular ingredient used in many recipes of the Livornese cuisine. Because Livorno is a port city (on the western edge of Tuscany), the fish is a frequently savoured product. One of the most popular recipes including dogfish is the Palombo alla livornese.

The boneless fish fillets are simmered together with chopped onions, garlic cloves, ripe tomatoes, carrots, extra virgin olive oil, white or red wine, salt and pepper. The ready dish is garnished with chopped parsley leaves and served hot.
