Pantzaria xydata is the preserved beet. The pieces of beetroot are preserved in vinegar and can be kept for the whole year round in a jar. The vinaigrette for the beet may contain sugar, mustard, olive oil and spices, such as pepper and salt. The beet becomes more delicious the more it stays in the vinegar. The combination of sweet taste of the beet and the sour taste of the vinegar is absolutely perfect. Pantzaria xydata is served as the appetizer, is added in some salads, or as a garnish of other dishes.
