Pappa al pomodoro
Pappa al Pomodoro is a very simple to make traditional dish, the receipt being specific to the Tuscan cuisine. It is considered to be one of the dishes which used to be eaten by the poor people. The soup includes Tuscan homemade stale bread, plum or/and cherry tomatoes, olive oil, white part of leeks or garlic cloves, basil, chili peppers, water or broth and salt. The ingredients are cooked until the tomatoes fall to pieces. The bread is broken into small pieces and dumped into the soup. The pappa al pomodoro is garnished with fresh basil leaves and served with olive oil. The dish is delicious when served cold too. The wine that goes best with the present dish is the Vernaccia di San Gimignano.
