Pappardelle sulla lepre

The Pappardelle sulla lepre (Pappardelle with hare meat) is a traditional Tuscan dish. Because it is quite nutricious, the dish is usually served as a main course.

The pappardelle (home made wide pasta made of flour, eggs, warm watter, salt and olive oil) is cooked separately from the hare sauce. The sauce is cooked by simmering the hare meat together with chopped carrots, onions, tomatoes, lemon zest, celery and parsley as well as red wine. Pellegrino Artusi, a famous Italian cookbook author suggests that a pinch of nutmeg makes the taste of the sauce even better.

When ready, the pasta is placed on top of the hare sauce and gently mixed with it. The dish is served with grated Parmesan cheese.
