Pasta e ceci (Pasta with Chickpeas) is a perfect example of what Italian food is all about. It is based on chickpeas. This delicious dish is considered both a soup and pasta, though it is mostly prepared as a soup. Thinly sliced onion, fresh celery, and garlic are fried with a little extra virgin olive oil and the rosemary. Chickpeas are added to the mixture and simmered till tender. Finally, cooked pasta is added to the chickpeas sauce. The dish is traditionally sprinkled with freshly torn basil or parsley.

This thick and hearty sauce is nutricious, simple to cook and delicious.
