Patatosalata (Greek potato salad) does not differ too much from other potato salads. What differs in Greek potato salad is that it uses red potatoes and the mayonnaise is replaced by olive oil and feta cheese. Olive oil and lemon are two favorite seasonings in Greek cuisine, and particularly lemon for potatoes. The salad relies on the lemon for the sharpness of taste and can be served as an appetizer or as a great side with many main dishes.

In a small salad bowl potatoes, diced onions, scallions, oregano, olives, and dill are well combined, then the dressing is made by whisking olive oil, red wine vinegar, lemon juice, salt, and pepper which is poured over the salad and mixed well. The salad is covered and refrigerated for a while until ready to eat. There are many versions of Patatosalata, but this Greek potato salad recipe is absolutely remarkable.
