Patlıcan Böreği is a popular Turkish dish that represents eggplants stuffed with fetta cheese. This vegetarian dish is special for its nutrient and healthy features. To prepare the filling first feta cheese is crumbled with a fork, and mixed with chopped parsley, black pepper and one egg. Then eggplant is cut in thick slices. Every two slices are stuffed with feta mixture and pressed together. The stuffed slices are coated with beaten egg and flour batter and fried in a pan with hot oil on both sides till golden brown. The cooked Patlıcan Böreği are dried of excess oil on a paper towel, and served at a room temperature.
