Istanbul cafes are crowded in the evening by Turks chatting with their friends, drinking raki and eating different Turkish meze. Patlıcan Salatası is an ideal starter or side dish in a summer evening in a friendly ambiance. First, roasted eggplants are peeled and mashed, then mixed with lemon juice, vinegar, salt and pepper until it gets a smooth texture, and served chilled. It may be garnished with diced tomato, slices of roasted pepper, olives or cucumbers. It goes best as a side dish with meat, Turkish kebap or Kofte. There is also a variation of this dish called Yogurtlu Patlican Salatasi, prepared with plain yogurt and with no vinegar.
