Pickled fish (Som pa)
Pickled fish, or Som pa or Som pha in Laos, is a fish dish.
It is easy to make this kind of fish. The fish is kept in a marinate made from salt and white vinegar for several days in a cold place. It must be turned during the day. Before serving it is well washed in cold water.
Pickled fish (Som pa) is served garnished with onion cut into thin circles, sprinkled with vinegar mixed with sugar and spices. It also may be prepared wrapped in banana leaves in Asian countries.
There are variations of how the fish may be pickled. It may be layered with onions while marinating.
