Colorful pinzimonio

Pinzimonio is a special way to savour vegetables in Florence and the surroundings. The appetizer may include any raw vegetables but the traditional version suggests that the best are carrots, celery, fennel and radishes, that are served with mix of wine vinegar, fresh lemon juice, olive oil, salt and pepper where the vegetables can be dipped. Other popular ingredients of the pinzimonio are baby artichokes, cauliflowers, bell peppers, tomatoes, green onions, ramps and asparagus.

The Pinzimonio appetizer goes perfectly with a Trebbiano Toscano or Vernaccia di San Gimignano white wine.
