Piselli novelli in casseruola is a delicious traditional Tuscan dish, cooked using green peas which grow in the end of June or the beginning of July. The peas are shelled and cooked together with fried chopped bacon, spring garlic, parsley, olive oil, salt and water in an earthenware casserole. When the dish is ready, the garlic and the parsley are removed. The piselli novelli in casseruola is usually served as an accompaniment to diverse meat dishes such as stuffed rabbit, braised beef or roast pork.
