Classic pollo alla fiorentina

Pollo alla fiorentina is a very easy to cook Italian dish. The chicken pieces are marinated in a mixture of olive oil, lemon juice, minced garlic cloves, chopped parsley leaves, rosemary, laurel and bay leaves for at least two hours, and meanwhile a batter for frying the chicken is prepared. Usually it includes flour, eggs, milk, salt and pepper. The meat, after being removed from the marinade, is sprinkled with flour and drained in the batter before being fried in a big quantity of oil. The ready pollo alla fiorentina is lightly sprinkled with salt and served hot.
