Polpette alla fiorentina with vegetables

The Polpette alla fiorentina (Florentine croquettes) is a dish that doesn't require excessive expenses due to the fact that it is usually prepared from leftover products.

The base of the recipe consists of minced roasted or boiled chicken or beef, stale bread, eggs and milk. Most of the variations of the present course also include mashed boiled potatoes, Italian parsley leaves, garlic cloves, red onions, Parmigiano cheese, salt and pepper. All the ingredients are mixed together and the resulted mass is transformed into balls which are fried in oil.

Sometimes, a special sauce made of carrots, red onions, celery, parsley, oil and white wine is served with the polpettes. In other cases, the dish is served with lemon wedges and Rosso di Montalcino wine.
