Pomodori con riso
Pomodori con riso (tomatoes stuffed with rice) is a popular dish all over Italy. The ingredients for this dish vary, all depending on cook’s imagination and ability, but, the Italian version contain the following components: tomatoes, garlic, rice, olive oil, celery, onion, Parmesan cheese, spices and herbs. The tops of the tomatoes are removed. Seeds, pulp, and juice from each tomato are cut and mixed with rice. Garlic, parsley, basil are added. Empty tomatoes are filled with this mixture. The rice will swell a little during cooking so do not overfill the tomatoes. Rice is baked in the juice of the tomatoes pulp, white wine or water which makes the rice to have a delicious taste. The dish is cooked till the rice is ready and the outside of the tomatoes are lightly and gorgeously golden. Stuffed tomatoes are usually served hot or at room temperature with salads or roasted vegetables.
